Our Inspiration
Inspired by the charm of French country kitchens and the seasons of the Hudson Valley, our menu features simple, rustic dishes thoughtfully prepared with care. From fresh vegetables and artisanal breads to carefully sourced fish and meats, we highlight local ingredients whenever possible. Seasonal menus evolve throughout the year, incorporating produce and fruit from nearby farms, and are designed to be intentional, comforting, and meant to be shared.

Chef Mark brings a deep passion for seasonal, farm-driven cuisine and thoughtful hospitality to The Kitchen at ElmRock. A 1986 graduate of The Culinary Institute of America, his culinary journey has taken him around the world — traveling to more than 50 countries and working in prestigious kitchens that shaped both his technique and perspective.
Now rooted in the Hudson Valley, Chef Mark draws inspiration from local farms and the rhythm of the seasons, crafting small, intentional menus built on simple, beautifully prepared ingredients. His style blends the elegance of European kitchens with the warmth of classic French country cooking — rustic yet refined, elevated yet deeply comforting.
Whether preparing an intimate supper or a celebratory gathering, his food is meant to be shared and savored, always grounded in community, seasonality, and genuine care for every guest at the table.
Outside the kitchen, Mark embraces the outdoors — especially skiing — carrying the same spirit of adventure into his life that has defined his culinary path.
